I know there are already a lot of responses to this thread but I thought I would share my experience with cake pops and cracking as well. After quite a while, I believe I have finally found the answer to no cracks! I normally freeze my cake balls so they do not come off their sticks when dipping. I let them freeze for about a couple hours. Then, I take them out of the freezer and let them sit on the counter at room temperature for about 20 minutes. Finally, I go ahead and dip them. I haven't had any cracks with this method! Another tip is, if using sprinkles, use smaller ones (small quins, sanding sugar, nonpareils) . I found that the bigger the sprinkle, the more likely it is for your pop to crack. I think this is because of the sprinkle's weight. Let me know if this works :)
