Hi all,
I had a friend ask me to make her son's birthday cake and she said, and I quote "for his birthday this upcoming Saturday." I copied that directly from her email. Well, I went to deliver it, and no one was at the park where the party was supposed to be. I called my husband who pulled up the e-vite we got a week ago (that I didn't pay much attention to, since she emailed about the cake) and the party isn't until next Saturday.
I know there's a lesson to be learned here about confirming dates and times etc. But my question is, I worked so hard on this cake, and put hours of time and a lot of money into it. What would be your experience about putting it in the freezer?
It's a chocolate cake with chocolate buttercream, MMF to cover it, and Wilton fondant for decorations. I figured I could put in the freezer wrapped well, and take it out next Friday, leaving time to fix any problems that freezing caused.
Anyone have any experience with this, or suggestions?

Never done it my self but have seen threads like this before on another forum and people with the same dilema have wrapped the cake in its box with cling film (saran) and then put it in the freezer and say it turned out fine but that was just vanilla sponge. Not sure if it helps.

This happened to me as well! Same type of scenario. My cake was covered with Michele Foster's fondant so I removed the loopy bow and put it in a large freezer bag (which I get from my cake decorating supply shop) froze it and pulled it out the next week. I also let it defrost in the fridge overnight and it turned out perfectly. I think your plan sounds like it will work too. Good luck! (And yes, I also learned my lesson icon_smile.gif

Well today was the day!

I wrapped the cake last week in saran wrap and then foil. I took it out of the freezer Thursday, and put it in the fridge for a day, then left out on the counter Friday night until the party Saturday. The cake was AWESOME! No one would have ever known it was frozen for a week! And, unless they see this, they never will know!!!

Thanks for your help everyone!
