Hi, making a wedding cake for one of my hubbies friends and the cake they want only feeds 100 and they will have 200 guests. How do you go about making extra cake for something like this?
For an extra 100 servings i would do a two layer (4" tall total) 12x18 cake. It serves 108.
You want it 4" tall like the wedding cake tiers so that you can't tell the difference of what cake the slice came from. You don't have to decorate the outside, but make sure the inside has filling just like the cake does.
The answer is in the title of this thread... a kitchen cake to serve the extra 100 people. (double-layer 1/2 sheet.)
I've never made a kitchen cake, thank you so much for the great info. Just a hobby baker and a little nervous about this one. I don't know the bride and I just want to make sure she is happy. Gonna kill DH for offering me to make it as a wedding gift! Just kidding gotta love the guy.

A kitchen cake is an extra cake in addition to the wedding cake. It's just there for more servings if the design of the centerpiece cake isn't large enough. It is still 4" high (like the tiers in the centerpiece cake) and has the same filling and frosting as that too, but it's not as elaborately decorated. When cut up the pieces should look the same as if they were in the wedding cake.
This cake is not on display is is usually kept in the "kitchen" until serving time.
It can be any shape depending on the servings you need.
