Well, I'm above average in this respect, so I can't say for certain. One of the few places I wish I could be below average, but noooo, I have to excel. icon_razz.gif

Does anyone have a great recipe for those 'old-school' cornflake wreaths, where you add green food coloring, then put cinnamon imperials on them to decorate? You know which ones I mean!! I haven't had those in years! Anyone wanna help me out? Hehee.

Pop's p.e.r.f.e.c.t. Peanut Butter Fudge (The code was cracked by K8Memphis, and she was angelic enough to share! WOOO!!)

2 c sugar
2 T Karo syrup
1 c water (I used 2/3 cup milk)
salt
1/4 c butter or margarine
1 t vanilla
1/4 t cream of tartar
1 1/4 c peanut butter (I used an overflowing 1/3 cup)

buttered 8"X8" cake pan

Combine sugar, water, corn syrup and just a little salt in a heavy 2-qt saucepan and cook on medium heat. Once your mixture comes to a good boil lower your heat and keep it cooking nicely until candy thermometer reads soft ball stage. Takes 10 minutes or so maybe 15.

Remove from heat--add butter and beat until melted. Add cream of tartar mix well. Add peanut butter and vanilla and beat well until it starts to hold it's shape--when it no longer just melts back into itself. Takes several minutes.

Pour into buttered pan and sprinkle immediately with kosher salt.

Hey, Mel!

Ask me again after I get my new thermometer. I dropped and broke my glass candy thermometer, so I just ordered a new digital probe thermometer off Amazon. Here's the link to the one I got -

http://www.amazon.com/dp/B0000CF5MT/?tag=cakecentral-20

I bought the set below, with the replacement probe and small thermometer. Always need a backup, right?

FUDGE
Now that I have your attention! icon_biggrin.gif

THIS recipe is *my* GO-TO for fudge! It can be frozen if you want and wrapped up tight. Ship/mail in uncut bricks to keep from drying out too quickly, too. I may have found the recipe here on this site or someone gave it to me, I can't remember.

It makes a boatload of fudge:

4 C Sugar
1 C Butter
1 C Milk
3 Teasp Vanilla (cuz I like lots of BAnilla! )
25 Large Marshmallows (6.15 ounces)
12 Oz Semi-sweet choc chips
12 oz Milk-chocolate choc chips
2 oz Unsweetened chocolate (the bar-type, NOT the "cocoa" type)
2 C Chopped walnuts or pecans (optional)

Butter heavy saucepan. Stir in sugar, butter, milk, & Vanilla. Cook over medium heat, stirring constantly. When it starts to boil, cook for 2 minutes, stirring constantly. Remove from heat. Stir in marshmallows; add chocolates, stirring until melted and smooth. Add nuts if you wish. Pour into greased pan(s). Let COOL.

tip: Or line your ungreased pans with wax paper, leaving the tops of paper high, then you can grab onto your paper and lift the fudge out of the pan...or dump it out on a wooden slab, peel the paper off, then cut your fudge with a huge pizza wheel. But whatever you do, DON'T grease AND line the pan,,,,you'll never get your fudge out!

Makes 4 lbs.[/b]

CARAMELS

1 C butter or margerine
1 pound brown sugar
dash salt
1 Cup light corn syrup (such as Karo, don't use off-brand)
1 15 or 14-ounce of sweetened condensed milk
1 teaspoon Vanilla

Melt butter in heavy 3 quart saucepan. Add sugar & salt; stir thoroughly. Stir in corn syrup, mix well. Gradually add milk, stirring constantly. Cook & stir over medium heat to firm ball stage 12 to 15 min) (I start counting the 15 min after the milk is stirred in, to make them soft.) (IF the candy starts to burn, you can transfer to microwave safe bowl, cook for 15 min on 60-percent power)Remove from heat; stir in vanilla.
Pour into buttered 9x9x2 inch pan.
Cool & cut into squares, wrap in handi-wrap twisting the ends. makes about 1-1lb.

*tip* making the candy a bit softer than you are used to, it will literally melt in your mouth and having your tastebuds screaming MORE MORE MORE!

I don't have a recipe or a name for it, but I was messing around last night in the kitchen and came up with an amazing candy. Maybe you all can help me come up with a name.

-Take your favorite chocolate fudge recipe, spread it really thin in a jelly roll pan (1/2")
-Let it set
-Spread on a thin layer of marshmallow creme
-Spread on a thin layer of homemade caramel
-Let it set, then cut into 1" squares (or whatever size)
-Then dip in tempered chocolate with a fork

I know it's a lot of steps but it's worth and people will think you're a chocolatier extrodinair icon_smile.gif

This process might be good with peanut butter fudge and just the mashmallow creme too

Enjoy!

This isn't so much a recipe as an idea for packaging your Christmas candy treats.

I made the Wilton giant cupcake this weekend and used candy melts to make the cup for the bottom portion. I got the idea from someone here on CC and it is stupid-easy.

As I was poping the molded candy out of the pan, I thought.. ..hmmmm.. ..edible gift basket. The candy shell is the perfect size to hold a bunch of fudge or dipped cookies etc. Wrapped in cello it would be super cute.

I'm going to try making the shells out of peppermint bark so that the recipient can eat the candy in the shell and then eat the shell.

Oh, I thought you were one of those closet recipe hoarders. You know - the ones who need a map to get through the maze of boxes of printed recipes and memory cards all over the house. LOL! I think they have an intervention for that, now.

Oh, and if you want to look skinny, just stand next to me. But now I'm on a weight loss program I created for myself, so don't think you're going to be able to stand there too long.

Holiday Mix
1 1/2 cups corn chex
1 1/2 cups honey nut cheerios
1 1/2 - 2 cups small twisted pretzels
1 cup roasted peanuts
1 cup of M&M's or Reeses Pieces (1/2 of large bag)
1/4 cup of slivered almonds
1/2 bag of white chocalate chips
1 1/2 tbsp vegetable oil

Mix everything but the chocolate chips and oil together. In small bowl, melt chocolate chips with vegetable oil. Pour over cereal mixture. Dump onto parchment paper and spread it out. Wait about an hour, and then break up pieces and store in air tight container. (If it lasts that long, goes quick in my house)

Maaan, I trusted you to keep that information just between you and me!! How COULD you!? It's true! My name is Melissa... I'm addicted to recipes. Some days while my kids are sleeping, I pour out all the little cards on the bed and roll around in them. You really don't want to know what happens after that!

Bark
Bark is one of my favorite things to give. Just melt Dark Cocoa Candy Melts® in a microwaveable bowl. I melt them in 30-second increments on medium power. Stir and microwave again until all melted.

Pour onto a cookie sheet lined with parchment paper. Now the fun begins.

Tiger Tail Bark
Drizzle Peanut Butter Candy Melts® over the Dark Cocoa Candy Melts®, then drizzle with White Candy Melts®. You can put this in the fridge to speed up the setting, or just leave at room temperature. Break up pieces of bark into good size pieces and place in a holiday gift bag or box. Tie with a pretty ribbon and attach gift card.
Candy Bar Bark
Melt Candy Melts. Before it sets up, sprinkle with crushed up candy bars. Break up pieces of bark into good size pieces and place in a holiday gift bag or box. Tie with a pretty ribbon and attach gift card.
White Candy Melts®
Melt Candy Melts. Before it sets up, sprinkle with dried cranberries and pistachio nuts. Break up pieces of bark into good size pieces and place in a holiday gift bag or box. Tie with a pretty ribbon and attach gift card.
Peppermint Bark
The Holiday Peppermint Bark Kit contains everything you need to make 6 treats for gift giving! Place bark in a Holiday Bark Gift Box Kit.
