Help! I used Satin Ice on my last cake. It tinted nicely, rolled nicely, applied nicely...then disaster! It seemed to dry out within the hour. Some areas became like elephant skin and other areas just plain cracked!
How do I keep it soft and moist enough so it doesn't elephant skin and crack? Am I supposed to knead in some shortening?

Try adding some shortening and seeing if that helps, but depending on when you bought it your SI might be "defective" for lack of a better term.
Try calling SI and giving them the numbers from the tub and they will be able to tell you if it came from their bad batches of fondant.
Make sure you are not adding to much powdered sugar as that can cause the elephant skin, if you feel it getting dry add some shortening and work it in until it regains its elastic soft feel. I just recently tried Satin Ice and I found I needed to add shortening quite a lot to keep it from drying.. hmm. I am used to MMF which to me is completely different and gives me great if not better results. HTH
the only time i had elephant skin was from adding Way too much shortening and PS but that was usually a Lot. the other time was when i used cornstarch before i found powdered sugar was the better substitute for rolling out fondant.
another option try working in a teaspoon at first of light corn syrup. for fondant that i make thats going to cover a cake Only (not for decoration/figure use) i always add corn syrup, makes it nice soft and pliable with less tearing etc.
i make my own (mmf) but the corn syrup may help- use small amounts at first. also microwaving fondant for say like 10 second intervals helps soften it to work with. i know that doesn't help with the elephant skin but will help with kneading other stuff in like crisco and corn syrup etc.
