Swiss Meringue Buttercream + Airbrush? - Urgent Help Needed

Hi, can SMBC be airbrushed on? I would then need to refrigerate the cake tonight and serve it tomorrow. I hope it wouldn't sweat when I took it out of the fridge and then the colour would run... icon_sad.gif I've sometimes found that SMBC can sweat when taken out of the fridge. Am I worrying for no reason...

Please advise.

i myself airbrush, and i would not airbrush smbc. maybe , you will get another answer from someone who has.

Did you use a perishable filling? You don't need to refrigerate SMBC if it's just overnight. It'll be fine on the counter.

Since SMBC sometimes won't take gel colors well, I would think you would need to use fat based colors- you know like chocolate color or cocoa butter based color. I think you can airbrush with those, I believe I have seen chocolate artists airbrush with them. As for the sweating, it will do that and I would guess it would interfere with airbrushing. Maybe you can blot it with something that won't leave residue? It's the whole oil and water don't mix thing, ya know? It certainly won't blow the icing off- no disrepect to the person who suggested that. I use meringue based buttercreams all the time, but I have never airbrushed. I have just seen the cocoa colors suggested for coloring purposes with IMBC and SMBC. I hope this helps some? ~Rachel

hi, i,m still looking for an answer for you. i use smbc and imbc all the time too. but have never airbrushed it. in my first post, i was thinking about whipped icing, when i said about the air blowing it . sorry. hope to get back with a correct answer. lol

Thanks everybody. I tried a sample on a cake board and it looks fine and seems to hold up o.k. I'm going to leave it overnight to see what it is like and make my decision as to what to do in the morning.

I'd love to hear how it turns out as I love using Swiss Meringue, and would love to know about the option of airbrushing on it. Best of luck with it all!

Based on my test piece I went ahead and did the airbrushing on the smbc cake and it turned out well. The colour I used was close to the colour of the cake, it was more to make the tiers the same shade. I only had to use a light coating and it turned out well I'm thankful to be able to say!
