Hi everyone! I have 125 cupcakes to make for an event next weekend (6 different flavors). I never freeze cake, but am considering it for this task due to all the different flavors. Has anyone ever frozen cupcakes? I'm concerned that they won't taste as good once thawed and that the wrappers will get "soggy". TIA
I have done it a few times for the same reason, alot to do. I take out and let them thaw slowly. They dont get soggy. If you are worried about it, try putting a few in the freezer, take them out the next day and thaw out then frost...
I freeze all my cakes, I froze cupcakes for the first time last month and the tops were sticky after thawing (I had been warned by CC'ers this would happen) but I didn't like the sticky top.
I ALWAYS freeze my cupcakes (12 fits perfectly in a gallon bag)
I have noticed the tops can get sticky, but it doesn't affect the taste of my cupcakes (WASC versions) I usually take them out and ice while still frozen - by the time I get 1/2 way done, the rest are usually thawed already anyway. If they are getting a fondant decoration, I do wait til they are thoroughly thawed
i've tried many times and wrapped 4 times with saran, but i still get a freezer taste. bummer
Like FlamingoBaker - I freeze all the time. Take out a dozen or more put them frozen in the delivery box and decorate directly in the box. So far - no problems, no funny taste. HTH.

Just this pass weekend I had an order and I made sure to put them in the freezer overnight because IMHO it keeps them fresh and more moist. I just freeze them right in the plastic container that I deliver it in.
