Hi I have had a couple clients recently say that my cupcakes were a little dry..I use a betty crocker mix what can I do to make them more moist?? I was thinking of adding an extra egg to the mix..
secondly, how do you guys deliver your two tier cakes...is there somewhere to get boxes that they will fit into? I've only seen the reg boxes..
There are lots of ways to alter a cake mix... my g-ma would just add a dollop of mayo to hers.
Probably the most popular as well as easiest is to sift a box of pudding and the mix into the mixing bowl..in a separate bowl make an emulsion of four eggs, 2/3 cup oil, one cup water then add to the dry mix.
Doesn't take long to mix together usually less than 2 minutes on medium. Really moist and more "scratch" in appearance.
I use shipping boxes for tiered cakes. Walmart has them in the office/shipping aisle and they are less than $1 here for 12X12, 14x14 and 16x16 sizes. I don't remember the exact height, (maybe 15") but I have easily fit three tiers in them with decorations on top.
I tape the bottom of the box together then cut vertically on two corners so I can pull one side of the box down and slide my cake in from the front. Works like a charm!
