Need Choc Cake Help - (Did Own Scratch-Off)

I tested 2 choc cake recipes and both were good, but the one I was partial to had a few issues I would want to resolve before baking for others. It had cocoa, buttermilk, oil & coffee. It was yummy, but looked greasy/shiny and a bit too light and airy with no dome. How can I fix these 3 things?

I took part in the original scratch off and I know which recipe you are taking about. How long are you beating your eggs. They should be thick and lemon colored. Also, I add the oil, buttermilk, and other ingredients VERY slowly.

When you master this recipe (and you will), you and the people you bake it for will absolutely LOVE it!

I haven't been able to find the chocolate cake scratch-off. I found the yellow cake one. Any clues where I can find it? I know it should be in the recipe forum somewhere, but that's as far as I can get.

I am pretty sure I beat the eggs with all the other ingrediants that were pretty much just dumped into the bowl. I have a feeling the oil might be the culprit as the other scratch-off I made didn't have oil..it had sour cream only......and that recipe made a denser cake with a slight cracked dome and no tacky/slimy top whatsoever.....thoughts?

I beat the eggs until they are thick and frothy. I add the oil in a thin stream to emulsify it with the eggs. I then do the same thing with the buttermilk. Then the same with the vanilla and coffee-chocolate mixuture. Once I add the sugar-dry mixture, a heaping serving spoon at a time. I let it beat for several minutes at medium-high speed. I do this all the time and I haven't had any problems.

You're welcome! There were 3 recipes that were all very similar. The one I am talking about is the double chocolate layer cake from Epicurious. I believe that the Epicurious cake, the black magic chocolate cake, and Wicked Wanda's cake were all very similar in ingredients and preparation.
