Ganache Cake???

I have to cover an 8" round and 12" round , 3" high choc mud cake. Can any of you CC viewers please tell me how much of ganache will i need per cake. I know the ratio is 2:1 choc/cream. I will be covering the cake with fondant after that. Also how long do i have to wait after i apply the ganache to place the fondant. Is pouring the ganache over is better than applying it. I need it to look neat before i place the fondant so that i will have a clean finish. Thank you allllllllllllllllllll, Please reply quick. I have to start making the ganache in about 7 hrs time.

the amount of ganache i would suggest would be 2.4kg of dark chocolate/ 1.2L of fresh cream (i think that is approx 5.3pounds of chocolate / 1.26 quarts cream). make it - then leave it to thicken (this can take a while so the sooner you make the better)

the amount you will need all depends on how heavy handed you are with the ganache- i find 1cm (1/4") coat is more than enough .. other prefer thicker.
just remembers that ganache freezes so don't be afraid to have a bit more that you need.

I find you get a better finish on fondant cakes if you apply the ganache with a spatular instead of pouring it. you can put it on then go over it with the back of a knife dipped in hot water to get a clean finish. then you should leave the cake to set (at least over night) - if you are rushed for time you cake stick it in the freezer.

the cleaner you get your finish on the ganache the easier the fondant will be.
