I need to make a cake for someone who is lactose intolorent. Does anyone have a really good tested recipe for chocolate and others (my client hasn't decided yet) that contains no lactose? (no butter, milk, and the whey that is sometimes in other products).

An icing recipe would be great too instead of just the old shortening, icing sugar and vanilla recipe.

Any recipes would very much be appreciated!

This is in Jan's list, but a vegan recipe would work, I'd think. I made some vegan chocolate cupcakes as a special request for a catering once. I was very happy at how delicious they were! (my first vegan baking!)
