Thanksgiving Desserts--No Oven Or Stove

I have been assigned desserts (one sugared, one no sugar added) for Thanksgiving. This is my normal thing to bring, but this year, I am in the middle of a kitchen remodel. I have a microwave, a large Crock Pot, a small convection toaster oven, and a gas barbecue to use. The range (oven and stove) is currently sitting on my back porch, and may not be installed until next week.

Does anyone have any suggestions, so I don't have to resort to buying desserts?

A dessert that my kids always make me bring is banana cream pie.

A purchased graham cracker crust (or of course you can make your own). Place sliced bananas over the bottom of the crust. Mix a box of instant banana pudding (using pie directions on the box). Pour over bananas.

Another refrigerator pie:
Graham cracker crust.
Carefully spread bottom of crust with a powder-sugar-cream-cheese mixture.
Pour a can of cherry pie filling over the mixture.
Top with Cool whip. (don't use the spray can whipped topping. It doesn't work. Trust me.)

Do you have any camping gear such as a gas burner, you could make crepes and a few other dessert options? I make little apple pie rolls. I take chopped small apples with cinnamon and brown sugar sauted till soft in butter then fill an egg roll rapper and fry it. Then sprinkle with powdered sugar.
Microwave fudge, microwave caramel, microwave peanut brittle, microwave apple crisp - just add a tiny scoop of ice cream to each when serving. Microwave lemon curd.


Canolli's in pre-made shells. No baking or frying of any sort.
Tiramisu
Have an ice cream maker?....pumpkin ice cream or whatever other flavor you prefer.

Trifle -- This can be made many different ways.

Sugar free can be done with many of the above mentioned items also. just using splenda products.

You could also use you BBQ grill and grill up some desserts too.

My mom makes pumpkin pie in her itty bitty toaster oven/convection oven. As long as the pie plate will fit, then it seems to work.

You could also tell the relatives you're in the middle of the kitchen remodel and ask if you could bring something else, maybe disposable plates and plastic silverware or the beverages, something you don't have to cook.

Galettes are yummy and you can probably make them in your toaster oven.
You can use refrigerated pie crust or puff pastry or make you own. Lay it out, spread some jam in the center (raspberry is awesome).
Layer thinly sliced apples, sprinkle with cinnamon and sugar or splenda.
Fold the edges up to contain the fruit (leave the top open with the apples showing).
Brush with egg wash and sprinkle with sugar.
Bake.

You can also add some raisins or craisins with the apples.

These all sound yummy, and not too hard, which is great. I was, for some reason, drawing a blank. I looked for graham cracker crusts at the one grocery store that is on my way home, but they were out. Grrrr. I did pick up bananas, and as long as the teenage boy with the never-ending appetite leaves them alone, I may try making my own graham cracker crust in the microwave.

The Galettes (on the BBQ, maybe?) sound great for the sugar-free. I have some frozen Trader Joe's pie crusts that should do the trick.

Microwave apple crisp sounds good for my work party on Wednesday. (I'm the office Mom, and they're all moping around because I haven't brought any homemade goodies since before the remodel started.)

With all those ideas, I can't imagine you could need another, but here goes, just in case --

Since canned pumpkin seems to be a little hard to find this year, if you can't find any, you could make a pumpkin butter pie using Trader Joe's pumpkin butter. I can't find the recipe I used last year, but here is one super easy no-bake version:

My mother in law makes this thing with jello and fruit, you could do it either sugar free or not. rasberry jello on the bottom, then a layer of fresh rasberries and cool whip, then have another bowl of cherry jello with cherries in it mostly set and pour it on top to finish setting up, then put cool whip and more fresh rasberries on top. Its wonderful!

One of my favorite fall desserts is Peat Moss Pie, which can be made in a crock pot. Pour a jar of applesauce in the bottom of the crock pot. Next, mix up a box of gingerbread. Gently pout the gingerbread over the applesauce. Cook until the gingerbread is done. Soooo yummy.

something that I used to eat ALL the night to cure my sweet tooth on weight watchers is that green salad, forget what it's actually called

I lg container used fat free cool whip
2 pkg. fat free sugar-free pistaschio pudding
about 2 cups of mini marshmallows
1 can of drained crushed pineapple

mix the pudding mix with the cool whip and fold in pineapple and marshmallows...so yummy...and I think 1/2 cup was like 1 or 2 points......totally saved me on weight watchers. I remember one day I ate the whole tub lol I think the whole thing was like 10 points or something...but I got so sick I wound up not even eating all my points that day lol!! However it doesn't deter me from still enjoying it

This dessert is easy and is great after a heavy meal. Multiply as needed: Mix 1 cup boiling water with 1 box raspberry jello, add 1 can crushed pinapple (make sure it is not cold), then add 1 pkg frozen strawberries - you can leave them whole, cut them smaller, or sometimes I even just mix them in and then blend a little with an immersion blender. Sometimes, I add some orange juice to get more out of it, and cause some of my sil's think its too heavy.

Here's a quick and easy Peanut Butter pie that everyone here loves. In a saucepan, just melt 1 cup of peanut butter and 1 stick of butter (definitely not low fat), once smooth and creamy remove from heat and let cool slightly and put in a kitchen aid mixer or mixing bowl. Slowly add powdered sugar until it becomes light and fluffy but not dry. Then fold in 1 container of Cool-Whip or other whipped cream. Spoon into a ready made graham cracker crust. Sorry there are no amounts. I have never had a recipe for it. I just kinda made it up.

Wow! this thread has been resurrected from last year! My kitchen remodel ended up being close enough to finished by the day before Thanksgiving that I was able to use the oven...for about 15 minutes. There was a small gas leak in the wall (so small the guy from the Gas Co. could barely detect it with the detector wand, but I could smell it), and we ended up having to have our gas shut off for the whole weekend--to the whole house. I made mini brownie bites (in mini muffin pan) in that time and made a barbecued apple tart. Oh, also cherry cream cheese pie, using sugar-free cherry pie filling, sugar free pudding in cheesecake flavor, with sugar free Cool Whip, and a crust I made in the toaster oven.
