Well since you were forthcoming with the fact and therefore emphasized that you have no specific experience with what she wants-- if you want the order-- you gotta jump through the hoops you set up for yourself.

I am all for being honest--but honestly, you know you can do this too. So you spin your consults the way you want them to go. If she specifically said have you ever made this exact flower on this exact cupcake before. Well yeah--you say nope.

Otherwise I say. "I'll take care of everything for you. Worry about the flower girl, worry about out of town guests arriving in time, worry about Uncle Ned having too much 'punch'--don't worry about your cake I'll take care of everything."

Reminds me of this one bride I'm still pissed about--wanted a designer champagne cake on an unsweetened kool aid budget--I said I use butter & real vanilla in my stuff blablabla -- she asked me if it was such and such brand vanilla because that was the best. I said, kma in so many words. icon_biggrin.gif but by that time I knew it was a lost cause anyhow.

Ok back to you--you provide the box for leftovers and as a result venues will love you. That kind of attention to detail will get you appreciated. I also leave one of my large boxes too in case not much cake gets served for whatever reason--sometimes they start form the top too. Making life easier for wedding planners and venues reaps reward.
