I am in the process of getting the necessary things done to be licensed to bake from my home. I need help on how to create a portfolio, Sample pictures would be great.

Get some dummy cakes and decorate them with fondant, then do a bunch of different styles on them and take pictures. You can do one with a simple ribbon at the base of tiers, then change the ribbon for a different look, then add something else. Repeat until you have about 5 or 6 different "looks" for each fondant-covered dummy.
