On Saturday I was baking cakes and had some batter left that I did not need. Because there was not time to do anything with it I put it in the fridge. Tonight I remember that it is in there, if I bake it up tonight (Tuesday) is it still safe to eat?

I'm a foodservice manager in a healthcare facility. USDA guidelines give us 3 days from the prep date - so today (Tue) is the last day you can bake it off. Don't know if it will rise, but it's worth a shot so you don't waste the batter. I'm all about the food cost! ![]()
Cake batter can be refrigerated for several days. If not needed for a longer period, freezing the batter is recommended.

Oh, I'm so glad to hear it came out okay. I've always wondered that myself and have never tried it before. I asked a friend once and she just told me it wouldn't work. Huh, looks like I'll be trying that soon!
I too was curious about storing leftover batter in the fridge. I have never tried it, I've always bake it all up. There is always time for just one more....heehee.
