I just got a huge amount of almond paste super cheap thanks to my local grocer accidentally ordering #10 cans of it instead of little tubes of it. Anyway I have 5 big cans and looking for fun things to make with it.

I am for tried and true recipes and fun experiemental ideas too.

It is thee best for modeling--make marzipan out of it and just eat it for breakfast!!!

Nigella Lawson has a great recipe for a moist almond cake that's really good. It calls for marzipan but you can easily transform your almond paste to marzipan by kneading in powdered sugar 1/2 to twice the weight of the almond paste, depending on your taste.

It originally calls for a 10" springform but I also bake it in mini loaf or mini bundts and sell individually. Or in 3" x5" loaves and package them as gift items.

It's great plain but to gussy it up I use a lemon, lime, orange or passionfruit glaze, whatever is on hand or some chocolate ganache.

thanks keep the ideas coming I have a ton of almond paste to use up but I could,'t resist at $4.00 for a #10 can. They were trying to sell them for $27 originally. I figured I could work it into desserts specials in the bakery.

almond bear claws or puff pastry. Time to buy some philo dough. thumbs_up.gif You can smear some marzipan into cressant rolls MMMMMMMgooood! I love cherry and almond together in a danish. I can not think about this any long-sorry. LOL

Thanks for the ideas. I have made mocha almond bars so far and a layered pie crust that has on layer of crust and almond paste smeared on it and another layer of crust. Made a fresh strawberry filling with a vanilla custard.

I'll send you one of my recipe for almond cream that uses almond paste (not near my recipes at the moment)... you can use this under fruit in baked tarts, to fill croissants and other pastries... it's one of the most delicious things I ever learned how to make. Also, Italian Pignoli (pine nut) cookies are phenomenal. Almond paste is used in a LOT of classic french dessert recipes as well. As someone else mentioned, fresh marzipan is of course made with almond paste... and there is the snacking... I can't help but munch on a little whenever I work with almond paste! lol

Pink Ziab~ Thanks the almond cream sounds yummy!! I have been slowly using up the first can. Part of it is I am not the hugest fan of almond paste or almond flavoring. But my customers are enjoying the treats. Trying to figure out a way to implement it into chocoalte cnadies somehow. Got a new candy display case need to fill it up.

Every christmas we make petit fours or pralines out of almond paste. And all my guests at chrismas loves tehm and asks for teh recipe. I also gif wrap them and bring them as a gift when we are invited to dinner


Mix almond paste with :
Triple sec or other citrus liquer and citrus zest
Strong coffe and orange zest
gin and lime or lemon cest
Raspberry vodka and raspberry pure from fresh or frozen berries.
malibu and coconut
And any other idea you have on flavourings.

2 tbsp liquid to 250 gr I would gess. Roll in to bite-size balls and dip in dark chocolate ( high quality choc with 70% cocoa min)

I'm with sadsmile - PASTRIES! All those classic danish that are hard to come by now - with the slivered almonds and glaze on top. YUM! Nowadays, they are often indistinguishable from every other pastry.

Also, I'm thinking fall tarts with either a thin schmear of paste on the bottom or a nice almond pastry cream under some fruit and nuts.

I got a recipe out of Southern Living Magazine years ago that the filling was almond paste, sugar, eggs and sour cream in a shortbread like crust. I believe it was a dairy council winner. Pipe whipped cream on top when done - beautiful and delish! The name of it was sour cream almond dessert.
