I've seen this advertised and was wondering how its done.. the choice of filling being your favorite cookie,. Would this be a cookie cake baked and slapped between 2 normal say white or chocolate cakes? Sorry if I seem dense in asking this

yes. basically, it is a cookie baked the same size as your cake and inserted between the two layers with a layer of buttercream as well.

Sounds interesting. Has any one tried this? Was it good? How was the texture?

yep and boy is it yummy. Whe n I do mine I kinda don't bake till golden. Then cake icing cokkie icing cake icing. Let it sit for a couple of hours first so that the cookie softens some. Chocolate cake with peanut butter cokkie is to die for.

Sounds like a neat idea! I use cookie dough as the crust for ice cream cakes, just bake it right in the springform pan, layer and add the ice cream etc after it's totally cooled. Much nicer than a graham crust

I actually have a pan set that I got from Williams-Sonoma that looks like a giant Oreo. I made it for the year end teachers' cake, and just put whipped icing in the middle rather than BC. Very simple, yet everyone was impressed = looked cool, tasted great!

The pans are made from cast aluminium and will last a long time. That's the only reason I bought something from W-S.
