Freezing Imbc? Can It Be Done

I just got my new KA stand mixer and am now dying to try making imbc, but I don't think I will use the entire batch for what I want to frost. I am wondering if you can freeze it or what the best way to store it and for how long.

IMBC freezes great! Just lock it up tight. I think the fridge shelf-life is about 3 months, give or take. After you defrost it i.e. when it's room temp, you should gently rebeat it to restore its silky texture. If it curdles or turns to soup, all that means is that it was either too cold or too warm (respectively) and you just need to get it in the other direction temp-wise...same instructions as when you're making it.

BTW you can also make a half-batch, if you don't want so much. But once you make it, you'll wish you made double icon_smile.gif.
