I am right in the middle of making home made ice cream for the first time. I just realized that the recipe calls for 2 tsp of peppermint EXTRACT. All I have is peppermint OIL. Will that screw up the ice cream? Is the oil more concentrated and I should use less? Please help!! Thank you so much!!!

I would imagine you could use either, you would just have to be careful with the strength, since the oils are ususally stronger.

The first time I used oil flavoring in a cake, (I used equal amounts) the cake seemed oil-y and the flavor strong. (The bottle said Highly concentrated.)

I use it all the time now, but adjust downward about half. (Make sure to taste to make sure the peppermint flavor is enough though.

I have never used it in ice cream though.

I don't know for sure but I googled it and one website said an extract is the oil extended with alcohol. If that is true then my guess is that you would use less oil. Hope this helps and is in time to help.

Thank you guys! I'm getting ready to try it now! Not sure how it will effect the texture of the ice cream though. It was supposed to be mint chocolate chip ice cream, but I'm thinking now that I might add vanilla extract and just make it choco chip ice cream! Thank you!
