I was looking for fall cake flavors for a wedding cake. Either pumpkin or spice cake.. Also was thinking of making a filling out of buttercream with the hint of lemon and cream cheese for them to try. Let me know if you have any ideas! Thank You!!!

Is this for your wedding or a client? If a client, what have they indicated they and their guests like? If it's yours, are you sure that your guests will like offbeat flavors?

I guess I'm one of those people that you guys complain about .... I like traditional flavors. White cake is great ANY time of year. I dont' bake "seasonal" flavors of cake. People eat chocolate year round.

'Coz I'm tellin' ya, if I'm a guest at a wedding and I get a piece of cake that tastes like pumpkin, I'm taking my gift back ... right after I finish puking.

i am with indy I like white and chocolate. However last week we did the wedding cake in white and 2 full sheet kitchen cakes. one was chocolate and one was pumpkin pie spice ( no pumpkin in the cake indy) I found out that the caters did not listen to the bride. She told them to cut big pieces of cake and that the tiered cake was white and the kitchen cakes were chocolate and spice. the caters didn't even cut the white wedding cake. the cake is pictured in my pictures it was a cake that would have served 134 people. they only cut the kitchen cakes and they cut those slices in half....if I was the bride i would have been steamed. I guess the brides mom wrapped the whole cake up and took it home.
i hope no one wanted to "puke" because all the caterer cut was the choc. and the spice.

It's for a client... and they wanted a layer for fall... a white and a choc. I'm not here to tell them they can't have what they want. icon_smile.gif

Absolutely! thumbs_up.gif I always try to encourage my clients to be considerate of their guests .... a couple who spouts "I don't care what everyone else likes, monkey-butt-earwax cake is MY favorite!", then I tell them, "Yes, but there will be 148 OTHER people eating the cake .... what do you think THEY will like?" icon_biggrin.gif

I have used Bobby Flay's cinnamon vanilla cake with much success with various fillings like apple butter and dulce de leche.

people love the cinn vanilla with apple butter, i think it tastes like a muffin though.

I do an apple spice cake that is really popular. I use caramel buttercream to fill it and I think it's pretty good. It's definitely one of my most requested. It's a fall flavor that isn't too "pumpkin".

I just did a carrot spice cake with a 50/50 cream cheese/bc frosting - and that was for june. The mom wanted maple cream cheese frosting (with real VT maple syrup in it) and chose the spice cake to match - so I think it's an all seasons cake.

Although, I love having peppermint white chocolate cake at Christmas!

I make a Tomato Spice cake with a can of tomato soup...popular taste but double-takes on the name.

Also, pecan pie cake with pecan pie filling has become one of the most requested wedding cake flavors--Thanks to DebBTX for "hinting" at her recipe.
