Best Oven For Baking A Lot Of Cake At Once?

Hi all, I'm in the process of trying to set up a commercial kitchen and I don't know what kind of oven to buy. Up until now I've only been baking with my conventional gas oven in my home kitchen and the biggest problem I have is when I want to make a multi tier cake I have to bake each tier one at a time. I would love to have an oven big enough and that heats evenly enough that I can bake all the tiers at once. I've heard that convection ovens are good for baking multiple things at once, but I've also heard that they are not the best for baking cakes. Does anyone have any suggestions on what type of oven is best for baking many cakes at once? Some of the brands I've been looking at are Vulcan, Blodgett, moffat, etc. I've also heard of DeLux ovens and I see their ad in American Cake Decorating magazine.

You really have to get used to working with the oven, at least that's what I think.
At work we have a double Blodgett, which I absolutely love, and there is also a single Sunfire oven, it's pretty decent as well. Both are convection ovens BTW, and we have never had any problem baking cakes in either one. And we bake a LOT of cake!!!

Awesome! I just found a double-oven from Blodgett on Craigslist for $600 (caterers retired) and I was hoping that they would be good to work with. This is my first commercial oven. Can you bake a 6" with a 14" or larger?
