I had that same exact thought last night that I would like to do a Banana Fosters Cake... I know that it's a caramelized banana mixture with spiced rum.. so I came up with Banana cake...torted and filled with a caramel spice rum buttercream.. HTH... it's that or making the fosters banana's and pureeing the results into a buttercream or even a cream cheese filling

Banana's Foster Filling

1/4 cup packed brown sugar
2 tablespoons butter
1/4 cup finely chopped banana's (firm texture works best)
1/2 teaspoon rum extract
1/4 teaspoon cinnamon

Combine brown sugar and butter in a small sauce pan over medium-low heat.

Cook and stir until smooth.

Stir in 3/4 cup bananas, rum extract and cinnamon. Cook till mixture begins to thicken slightly. Cool before adding to cake.

For the actual cake I use chocolate and ice with whipped cream it is perfect that way but I am sure there are other creative ways to make this recipe yours.

mmm so i dont know if anyone noticed, but the recipe says 1/4 cup bananas and the instructions say 3/4 cup wich one is it? I've looked everywhere for a recipe and this one looks quite yummy i just want to be sure, and one more thing is it ok to use actual rum instead of extract?

Is it possible to use uncooked fresh bananas with a caramel frosting in between the layers? I'm wondering if the bananas will react funny if it's not going to be eaten right away. Thanks for your help!
