For anyone not familiar with the CCCC.....
I thought it would be fun to start a Cupcake Club like Oprah's Book Club and test out different cupcake recipes. The intention of the CCCC is to explore new recipes and techniques.
This is no place for bashing... constructive criticism only. You can say you didn't like a recipe, but say why, and if you have suggestions for 'fixing' that issue. Example: "The flavor was good but the cake was too dry, so I added 1/4 c. more oil and 1 egg." Or something to the effect of, "They came out dry, did anyone else notice that? What did you do to fix it?"
The first time you should follow the recipe as it is given, otherwise you're not truly testing the recipe. Then... if you loved it... you're done. If you felt it could be improved, make your improvements and post what you did.
...Anyone can jump in any time! If the sound of the recipe doesnt appeal to you then try the next one.

I know I'm tired of winter.... and thought these cuppies would bring a bit of early summer.
CCCC# 11 -Key Lime Macadamia cupcakes*:
2 cups unbleached all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon zest and 1/4 cup juice from Key limes** (see note)
3/4 cup canned coconut milk
1/2 cup butter, softened
3/4 cup mild honey, preferably clover
2 large eggs
1/2 cup shredded coconut
1/2 cup macadamia nuts, chopped
Preheat oven to 350 degrees.
Sift together flour, baking soda, baking powder and salt; set aside.
In a liquid measure, combine Key lime zest and juice, and coconut milk; set aside.
In a mixing bowl, cream butter until fluffy; scraping sides of bowl, as necessary.
Add honey; mix well.
Add eggs, one at a time, scraping down sides of bowl after each addition.
Add half of the reserved dry ingredients to the butter mixture; mix on low until just combined.
With mixer running on low, slowly add the lime mixture.
Add remaining dry ingredients until just combined.
Stir in coconut and macadamia nuts.
Fill paper-lined muffin tins 2/3 full.
Bake 18 to 22 minutes, or until a toothpick inserted in center of a muffin comes out clean.
Remove to wire rack; cool.
Frost with Coconut Cream Cheese Frosting, if desired.
Makes 12 to 16 cupcakes.
**Note: Regular limes may be substituted.
Coconut cream cheese frosting
1/2 cup cream cheese, softened
1/4 cup butter, softened
2 tablespoons lime juice
2 tablespoons mild honey, preferably clover
4 to 5 cups powdered sugar
1 1/2 cups shredded coconut
In a mixing bowl, cream together cream cheese and butter until light and fluffy.
Add lime juice and honey; mix well.
Add powdered sugar, 1 cup at a time, until desired spreading consistency.
Frost cupcakes; top with coconut.

These sound delicious. I can't wait to make them. I love lime and macadamia nuts. Reminds me of the tropics where I really would like to be right now!

I was thinking that the honey, although a key ingredient for the original creator, was clashing a bit with the lime and coconut. I am gonna try substituting the honey for sugar and see what I get. The frosting, however, was AMAZING!!!!! Loved it!!! I will definately make the frosting again! mmmmm Thanks Jan!
so can someone please tell me where to get coconut milk? I used coco loco once and uhm...that was wrong, wrong, wrong!

Hi Julia. You can find it in the Chinese cooking aisle or the liquor aisle. There's 2 or 3 different brands.

Hey, I haven't been getting notices so I just saw this, but instead of subbing sugar, to keep from changing consistency or anything, sub white corn syrup. That's how I do it. JMO!
ILoveMy6Boys, did you use the key limes then? I can't find any but I do like the key lime juice by Nellie and Joe's. I might have to use that.
MMMmmmm! Those look delicious! Can't wait to try them! You can find the Nellie and Joes in the juice aisle. Not all stores carry it but it should be next to the regular lime juice. It's a must to make a Key Lime Pie if you don't have the key limes.
From what I've been reading if you substitute the honey, either with corn syrup or sugar and water, you should also decrease the baking soda by 1/2 tsp or not at all because it is used to reduce the acidity in the honey.

Thanks Jess. I've read through all 14 and have been trying to add at least the next CCCC to the end when I finish one, so at least other new folks like myself have the link to the next thread. And especially with the last few as so much time has passed since they were all started.
