I subscribe to a cake decorating website where I periodically receive tips. I received one today that said to add a FEW drops of vinegar to your buttercream and it will prevent it from cracking. Key word on a "FEW" drops. They said you couldn't taste it, and your BC will not crack. Anyone heard of this or tried it? Deb
I have heard of it but never tried it. It wouldn't surprise me though, vinegar is like the miracle liquid. It cleans your house, is good for soaking your dishes, takes smells out of the laundry... why wouldn't it prevent cracks in icing?!
*raises hand* I'm with the people who have heard of it but never tried it There was a thread on here probably about a year ago it, if you did a search for vinegar it might come up.

Deb, YES! I heard it right out of Marina Sousa's mouth at the Tulsa Sugar Art Show last fall. My friend actually asked her during her demo how to keep bc from cracking and Marina's response was to add a couple drops of vinegar. Who knew???
Never tried it either...I think I am more worried about flavor changing or smelling like vinegar!

GONNA TRY IT RIGHT NOW...getting ready to whip up a batch for a cake due on Saturday...Will report back on the taste and cracking. Wish me luck!
This came up in a thread yesterday regarding Sugarshack icing cracking. I believe Sugarshack herself came on and said yes, vinegar can help.

Let me know how it works!

Tried Sugarshack's recommendation: added 2 tsp white vingar while the batch was mixing (using her buttercream). I did not taste a difference, and it did seem to help with the cracking.

Thanks for letting us know!

I don't have an issue with my (white) buttercream....but I have issues with my chocolate. Maybe it depends on the recipe...I'm sure those that have had cracks will explain.
Very interesting! I am going to give it a try. I have had problems with my buttercream cracking during transportation. I'm not sure why it happens.
I make Indydebi's icing and I use 1 tsp white vinegar to each batch. So far, so good. No vinegar taste, and no cracking.
I totally forgot to report back on this!!!!!!!!! Worked like a charm!! Didn't change the taste one bit!!!
