A friend of mine likes my cake decorating but doesn't like buttercream or fondant. She likes the type of frosting the stores use which they call whipped cream. I tried one with flour, sugar, butter, milk & vanilla but I had tiny lumps in the flour & milk mixture after it cooled. Can anyone offer a good recipe for that Publix type of whipped frosting? Something I can do shell boarders & roses with. Thanks!!

I used to be a cake decorator at Publix. Are you looking for the Publix buttercream or the whipped topping, like what they use for pies? The roses and other decos done on cakes at Publix are NEVER done out of the whipped topping, it isn't stiff enough for that. It is done with their buttercream.

The whipped topping is made fresh using whole milk, heavy cream, and an industrial brand non-dairy whipped topping mix that is only available to grocery stores and restaurants and large bakeries.

The Publix buttercream is made fresh in the store. It is basically a combination of the Wilton buttercream (confectioner's sugar, shortening, vanilla extract) and IMBC (Italian Meringue Buttercream, which is made by whipping egg whites and adding a hot cooked sugar syrup and whipping the two until a meringue is formed and then blending in real butter).

HTH!
