Can anyone please share a scratch coconut-lime recipe? Is this combo just coconut cake with lime filling? icon_confused.gif

I think we're on our own here... I think everyone is in that rediculous thread in the Cake Disaster forum. I'm surprised no one has locked that thread by now... icon_rolleyes.gif

I'm going to try doing a coconut cake and filling it will lime filling or lime buttercream. icon_confused.gif I recently saw a coconut lime cake and it was beautiful when it was cut. That's what I'm trying to acheive.

I have a scratch coconut cake recipe. I would assume that adding a bit of lime zest to it would give a good lime coconut flavor. PM me if you would like my recipe. It took secondin the state fair

Hmmm, maybe a coconut cake with lime curd for a filling... or if you want the lime in the cake maybe lime zest?

Is there lime extract like the lemon or orange extracts?

Oh what about a compound like amoretti makes? I have the pistachio, there are a lot of flavors.

I like the idea of a coconut cake with a lime filling. If you want a buttercream filling you can mix the curd into the buttercream.

Oooohhhhh... that recepie looks so good, this may have to be my next cake! I did the key lime cake w/ keylime buttercream for some co-workers and I'm a hero... I can only imagine what this one will do!

That foodnetwork recipe:

Does the cake have to be refrigerated? I have a non-hazardous foods license, so if it does I'll have to do a different frosting.
the glaze and icing both have sour cream and cream cheese... or is there enough sugar to prevent bacteria from growing?
I wish recipes stated whether or not to refrigerate... icon_smile.gif

Well, I feel like a complete bonehead, because guess what I just found?

a Lime filling recipe that I've had all along!!! dunce.gif

I was looking through one of my PETA recipe books today, and I found a Key Lime Pie recipe (the filling is what I needed), and I've had this book for 7 yrs!!! I hardly use recipes anymore (and I loathe pie), so I never thought to look. It doesn't need refrigeration, so that's even better!!!

I'm going to make this Coconut-lime cake tomorrow ~ I can't wait!
It might lack that intense green color, but that's ok with me ~ I don't need radio-active fillings. icon_lol.gif

Key Lime Pie Filling

1/4 cup fresh (key) lime juice
2 1/2 cups soymilk, or other non-dairy
1 cup sugar
5 Tbsp cornstarch
2 tsp organic lime juice

Whip all ingredients together in saucepan, over moderate heat. Stir contstantly until thick and creamy.

Also~ it's possible to make Vegan Meringue icon_eek.gif I'm going to be doing a little experiment this weekend to see if I can make
"Swiss (or whatever) Meringue BC icing". This just opened a lot of windows for me...
