I have read several times here in CC about brushing a cake or cupcakes with a "simple syrup" to add flavor and moisture to a cake. What is it? Do you buy it or do you make it? Thank you for any info.

Simple syrup is a solution of sugar and water in a 1:1 ratio that you heat in a sauce pan until the sugar is dissolved and then let cool. You can flavor it with many things.

Ive never used simple syrup but have always been curious as to *when* you added it to cakes that you are freezing? I assumed it would be after they cooled before you froze them...locking in the moisturizer. But I saw a cake challenge that lead me to believe you add it after the cake is defrosted, right before you start decorating?

You can do it at many times during the process.. some like to put it on when the cake is warm.. some after it has cooled. It's up to you really. icon_smile.gif

The term "simple syrup" always makes me smile. It makes me think of syrup that is not particularly bright.
