Outdoor Wedding...help

I have an outdoor wedding and am struggling with filling ideas. What are some good fillig recipes that can stand up to the heat? The bride also wants cream cheese icing, but her mother and I both told her it may be difficult to pull off because cream cheese will melt. Does anyone have any tried and true methods or recipes for cream cheese that would work?

Oh..did I mention...the wedding is in April and in Georgia? icon_smile.gif

You could buy the sleeve of cream cheese filling and that would be okay. They do not have to be refrigerated. I have not personally tasted it though.

Oops. I thought you were looking for cream cheese filling not cream cheese frosting.

I have a recipe for Cream Cheese that I use year round, in Tennessee
It is 3pkg of cream cheese, 1 1/2 stick butter, vanilla, and 2- 2lbbags of powdered sugar.

We use it year round, we've never had any problems with it. April shouldn't be bad. Good Luck!

I have a few questions before I can even offer a suggestion. First, what kind of cake is it? Also, will it be protected by a tent or anything? And, how long, approximately, will it have to be outside before it is served? My first instinct is to suggest a dummy cake, except for the layer to be used for the slicing ceremony, and make sheet cakes to be sliced and served to the guests that could be kept cool inside. That way you could use whatever filling the bride and groom are hoping for. Good luck!

There is a crusting cream cheese recipe in the recipe section. I have tried it and it works very well. I would like to know what time of year and where you are located. I live in Oklahoma and I have a policy no fillings after May through Aug. They bulge and the cake is ugly Can you cover the cake with fondant? That may solve your problem. A Cake with fillings and creamcheese is asking for trouble in OK humidity!

What cake recipe will you be using? My daughter's wedding was outside in Texas during April, but it was an early evening wedding so the temperature wasn't much of a factor.

Thanks for the responses. The cake will be in April in Georgia. It will be covered by a tent in the late afternoon/early evening. The bride wants to be very simple. She wants a plain white cake with a chocolate filling and cream cheese icing. She wants a grooms cake with classic yellow cake with chocolate icing. I have tried various chocolate fillings to try and have a different taste from the grooms cake, but since they are basically the same cake I am having difficulty. I am going to give her different options with cake, filling and icing flavors but ultimatley I want to have what SHE wants. We are meeting today so we will see.

I'm in Alaska (read: not very hot at all) and I insist on fondant for outdoor cakes. You can put it OVER a layer of cc icing if you like... then you don't have to worry about melting at all. Also bugs and tree crap can LEAVE the cake once they land (and they will) instead of getting stuck.

Never had a problem with heat, I'm in AZ....
