Love Sugarshack's Bc Recipe, But Can You???

Ok, my mixer does not have the paddle attachment only the beaters. I made a small batch of her icing just now, because I wanted to taste it with using creamer...tasted awesome...

It came out very creamy and smooth, but not sure if all the air bubbles was out....I used the beaters and was wondering if you can get the air tight icing with beaters vs. the paddle?

I have a sunbeam 5qt stand mixer and love it, but it did not come with a paddle. I guess I can look into the attachment, if it works on the brand of mixer...does anyone know????

Just got home from my trip and have no answer...that is shocking...

Please, if anyone can assist me, I would greatly appreciate it. I have to make icing this week and would love th may sugarshacks...but, still do not have the paddle attachment.

Is it possible for me to pm sugarshack direct? If so, how do I search for her?

From the forum click on Memberlist, then type in sugar in the search field. That will show you a list of members with names close to hers, find her then click on her name to go to her profile, then you can send a Private message from there. Good luck on finding your answers!

Before I got a bigger mixer with the paddle, to make her bc recipe, I had to use my hand mixer to make the icing. Then my sister in law let me use her Sunbeam stand mixer, my icing turned out good for not having the paddle and at that time it sure beat using my hand held mixer. I did have some air, but nothing like I did with my hand held.

I wonder if using just one beater, would help when making the icing, then on the other hand it could also hurt your mixer. Not really sure about this idea, maybe someone else might see this post and have more info on this thought.

I think the most important thing in keeping out the air is making sure yhe beaters (or paddle) are completely submerged. Even with the paddle, if the paddle part is exposed, it is actually pulling air into the icing. If they are completely submerged, you are mixing the icing only, and NOT pulling in air.

I agree with three girlie...
I have a sunbeam and make sugarshacks all the time... though I have to make a smaller batch because 5 cups of shortening and all that sugar does NOT fit in mine! Sunbeam does not have a paddle that I know of... Good Luck!

I made a very similar recipe for some 20 yrs using just beaters.
As was said, make sure you make a batch big enough to cover the beaters and mix for a long time on low speed.....usually I mix mine up to 20 minutes.

Thanks everyone. I did email sugarshack last night and she was very helpful. You can use the beaters but as mentioned, you have to make sure your beaters are completely submerged into the icing. I made a 5qt batch today and it came out beautifully.

Thats GREAT! Ranbel, I am happy that all worked out for you. Yes, it is one of the most important things... to make sure your beaters are completely submerged into the icing. Sorry, I forgot to mention that.

kakeladi said " usually I mix mine up to 20 minutes", I only did 7 to 10 mins., could be why I still had some air (very little) in mine when I used the beaters. I was mixing the time that the recipe gave, but with the beaters not a the paddle.

I agree. I make a combination of Sugarshack's and Indydebi's BC (but I add some real butter instead of all shortening). I find the smoothest batches I make (and I have a KA with the paddle) are the big batches in which the paddle is very well covered with icing. It's silky smooth!
