I might be alone in this but I actually like my cupcakes to bake up flat, it gives me a nice surface to decorate on! Anyway, here's a recipe I use not just for my cakes but also my cupcakes, bake for about 17-22 mins. for the latter:
You can also swap out the vanilla for any other flavoring/extract or add some orange or lemon zest, yum!!
