CCCC better known as Cake Central Cupcake Club!
I thought it would be fun to start a Cupcake Club like Oprah's Book Club and test out different cupcake recipes. The intention of the CCCC is to explore new recipes and techniques.
This is no place for bashing... constructive criticism only. You can say you didn't like a recipe, but say why, and if you have suggestions for 'fixing' that issue. Example: "The flavor was good but the cake was too dry, so I added 1/4 c. more oil and 1 egg." Or something to the effect of, "They came out dry, did anyone else notice that? What did you do to fix it?"
The first time you should follow the recipe as it is given, otherwise you're not truly testing the recipe. Then... if you loved it... you're done. If you felt it could be improved, make your improvements and post what you did.
Weâll give you a week to try it out and Iâll pick someone new to pick out a new recipe for the next week then they can pick the next person, etc. That person will start the new thread, adding the link from the first thread, etc.
Anyone can jump in any time! If the sound of the recipe doesnât appeal to you then try the next one.
Thanks to the ladies on the âHow about a thread to seriously discuss making cupcakes?????" thread for helping me out with this!
Rules:
1. Have fun!

3. Start with original recipe.
4. Give constructive criticism.
Ending date of this recipe to be September 28th.

I've been wanting to try this recipe for a couple of weeks now so this will be a good excuse to finally try it.
From Taste of Home

Carrot Cupcakes
Ingredients:
4 eggs
2 cups sugar
1 cup vegetable oil
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground allspice
1/2 teaspoon salt
3 cups grated carrots
CHUNKY FROSTING:
1 package (8 ounces) cream cheese, softened
1/4 cup butter, softened
2 cups confectioners' sugar
1/2 cup flaked coconut
1/2 cup chopped pecans
1/2 cup chopped raisins
Directions:
In a large mixing bowl, beat the eggs, sugar and oil. Combine the flour, cinnamon, baking soda, baking powder, allspice and salt; gradually add to egg mixture. Stir in carrots.
Fill greased or paper-lined muffin cups two-thirds full. Bake at 325° for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing form pans to wire racks.
For frosting, in a large mixing bowl, beat cream cheese and butter until fluffy. Gradually beat in confectioners' sugar until smooth. Stir in the coconut, pecans and raisins. Yield: 2 dozen.

Question -

Do you think I could use the Junior-style baby food carrots, or should I really just go fresh?

My food processor is on it's very last leg, and I'm a knuckle-scraper with a grater box (don't need extra protein, right?).

Should we start a Yahoo group for it, or should we do it right here?

What a terrific idea! There are soo many cupcake recipes I want to try from the huge cupcake thread! This is a great way to learn new recipes and ideas! Count me in? Can I submit one of the recipes from the huge cupcake thread--- I would of course give credit to the person who posted it!

I'm in, too!!! I LOVE carrot cake--can't wait to try the recipe. I am scheduled to go to graveyard shift for 6 weeks and will be working a LOT of overtime, but that just means I'll have some time to play during the day, and then I can bring the cuppies to work with me so they will be gobbled up!!!

I already have a question about the recipe. How would you measure the 3 cups of carrots? Compacted into the measuring cup or loosely placed?

I hope you were serious about Sept 28 being the deadline for comments on this. I'm one of those members who lives on a monthly pension, and I have to buy whatever I don't have in the house at the beginning of the month.

May I make some more suggestions, including devising a system for posting to the club.

Here are my ideas, starting in October:

*New threads for each month's cupcakes will be posted to the Cupcake Forum, and each month be separate from the others. For instance - Next month, new thread - Cupcake Club for October. This way we don't have to wade through numerous pages until we find this month's information.

*4 recipes submitted per month, first come, first serve.

*Submission between the first and third of the month, and you have until the last day of the month to try the recipe and comment or question on it.

*If you have already submitted a recipe, please wait 6 months, before submitting another one. If any particular month does not have it's quota of submissions, then you can submit another one on the fourth of that month - first come, first serve.

This way, everyone has the same opportunity to submit recipes they have.

Does anyone have anything they would like to change, or add to this suggestion? Does everyone agree to this?

I am just trying to avoid the confusion that the throwdowns caused, because there were so many going on at one time, and nobody knew where to find them unless they were on the homepage.

Feedback is welcome.

Sounds really fun! I would love to join!

But it almost seems like there should be a moderator of this club who decides what the cupcake recipe will the spot-lighted. Recipes to be considered would have to be submitted to the moderator. Someone mentioned about a yahoo group, maybe that isn't such a bad idea! Don't want this to get too complicated, but I agree with Theresa that some guidelines would have to be set.

We're just going to start a new thread for each entry with the previous thread being a link. The next chosen recipe should be ready to post the day after the end of the previous recipe. Otherwise, choose your next submitter right away so they have time to think about what they want to submit.

I believe you can do as many or as few as you want to try .Right ? Its not a throwdown just a sort of tasters club/try new ideas sort of club. Unless Im way off on the original idea?

You're right Fiddle! It's just to try cc recipes. Not a lot of rules. I've already asked someone to submit the next recipe. Hopefully we'll do one a week. Give us a chance to try the original once and then maybe try it with some substitutions a second time before the week is over.
