Scratch Or Cake Mixes???

Do you use the standard cake mix or mixes with additions or scratch? What do you prefer? What is the majority of the brand of cake mix also? I know this has been addressed before but I can't find the thread. I have been using an extender but wonder if it's really worth the extra money. What's your opinion

There isn't one answer to this question. It depends on your tastes and baking skills, and preferences of those who eat the cake.

Some who eat mixes find scratch cakes a bit dry, but again, if the cake is well made with fillings and icing, they won't find it dry.

Use what you know, and what is well received.

This is all personal preference and there are some people who will argue box mixes until they're blue in the face and their are others who will argue scratch cakes until they're blue in the face.

I personally use Doctored mixes and scratch cakes. It depends on the flavor on what I use. I have found some recipes I like better in scratch and others box.

Other people are all box or all scratch. Find what you like and what your customers (or family if they eat the most) like and stick to it.

As for price wise I think your basic recipes are about the same. You can bake a doctored mix that cost more than a scratch cake and a scratch that cost more than a doctored mix. A lot comes down to the volumn you can purchase your ingredients in and what price that is.

I personally use a cake mix that I doctor. People say the cake is so moist and tasty. One girl I did a cake for put it in the freezer ( wedding top)and then forgot about it. She remembered it 15 months later and took it out of the freezer, thawed it and they ate it. She said the icing was not great but the cake was still as moist as ever.

I guess it is preference ...mixes are easier for me...

Scratch. I just got my butter cake recipe worked out to where I like it. I might tweak it a tad more though LOLOL. I will use this as a "base" batter. All flavors will be added to this. It's pretty tasty with just basic ingred.

For the above it will make two 8"x2" round, and it cost me 2.52. That's just ingred. costs.

I use scratch for some things, mix for some other things, and throw in a doctored mix now and again too. I don't like to limit myself to just one category, so I just play around with different things.

It's all a matter of preference. There are probably just as many who like one thing as the ones who like the opposite.
