So I've done a search and ready posts about cheesecake wedding cakes, but I still have a couple of questions. Are serving sizes considered the same as any other wedding cake considering that a cheesecake is thinner than a normal layer cake? Does anyone have an idea of a per serving price for something like this? My customer is looking for a wedding cake that would serve about 175 guests, all strawberry swirl cheesecake. What sizes would I use. I have read where you can bake a cheesecake in a standard cake pan, what sizes would I need? Should I use 3" deep pans? How in the world do you bake a really large cheesecake so that it gets done all the way through without a heating core. I do bake all of my cheesecakes in a waterbath, so I know that's a start. Sorry for all the questions, but I need all the help I can get with this one. Thanks!!!
Here is my take, I am sure others will pipe in as well. I think you could use Earlene Moore's serving chart, it is quite generous in serving sizes.
Also, I would suggest several cakes on varied pedestals, rather than trying to tier or stack this much cheesecake. The one I have in my photos was for only about 40 people.
You can use standard pans, just line them well with parchment.
A waterbath and a long baking time is required for larger cakes, but again I would choose to bake more cakes in reasonable sizes.
Cheesecake freezes well. As for cost, the ingredients are expensive, and the cakes are time consuming. I would add significantly to your normal price per serving.

I have done several cheesecakes for weddings and use the layers as I do regular cake. Some have requested one tier as cheesecake and others as cake so the outside of the cake looks the same. I do not use the crumb crust at all on the layers but add a good filling of fudge or turtle or fruit.
