I'm confused. Are these cheesecakes that are wrapped in fondant? I didn't think that was possible. Can someone please explain it to me?

Thanks,
Kathi

Kathi,

Their cheesecakes are covered in chocolate plastique. In fact, I believe all their cakes are covered in chocolate plastique.

I'm not sure how she makes the majority of her cakes, but I saw her on Food Network making a fish in a frying pan and she covered the fish in modeling chocolate which she colored and rolled out, like you would fondant.

She uses Belgian Chocolate. I watched her on Food Network once and emailed with her back and forth about it for a little but that was years ago. She does use chocolate though. icon_smile.gif

They are so gorgeous.

It would be amazing for Neiman Marcus to ask me to do cakes for them. *dreams*

Her cakes are fabulous and one day I hope to be as good as she is.

If I'm not mistaken, her Fall Harvest cake is being sold by one of the cooking catalogs. I think it was Sur La Table. I couldn't believe the price...$150!

Thank you everyone for explaining it to me. I've been off the computer since I asked the question. Can anyone suggest a book or website to learn how to cover cheesecakes is either fondant or chocolate? Not that I ever hope to be able to do this level, but it would be fun to do some simple things and like it was said, who doesn't like cheesecake!

Thanks,
Kathi

I find it hard to believe that they are cheesecakes. I mean - aren't cheesecakes those pie-looking things? How can you frost a pie that is 4 inches tall?
I don't think they are lying, I just can't visualize it. I wish there was a way to see one cut...

Has anyone ever made one of these? She has several that are spherical - BALLS! icon_eek.gif
This blows my mind...

Exactly! I mean, cheesecake is whatever shape the pan is, right? How would you make a cheesecake sculpture?

i'm honestly not sure they shape some of the cheesecakes, but I think she does cake too. Maybe some of the designs we see are cake.

Either way ..those cakes are incredible!

They featured her cakes on Food Network and showed her making a cheesecake fish. It was unbelievable and she is extremely talented.

I went to the flavor section:
http://www.elegantcheesecakes.com/ECC_Flavors.asp
There are regular cakes there, so it makes sense that the balls would be cake. Man, I feel kind of let down - I was hoping for a wizard or something to be able to tell me you could sculpt a cheesecake!
Oh well, it's something for our cake wizards to think about (I understand you can FREEZE cheesecake)...Image
Has anyone eaten one or know how to cover a cheesecake?

Please!! Someone has to know how to do some of that stuff. I sent a link to my fiance -

"Cool! That's really nice. I like the golden seashells, fits the (upcoming) wedding."

"Yeah, but did you see the price.?"

"Yep."

Um, sorry, I'm sure it's worth it, but a cake that costs more than the wedding dress? Even cheesecake, geesh!

I gotta learn how to do this, or knowing him, he'd go get one!

Zmama, if you didn't need cheesecake, that cake could be made in fondant with luster-dusted candy melt seashells...I've seen many decorators on this site that could tell you step-by-step how to do it.

I can't believe she only charges $30 for a tasting appointment. I swear, if I lived near her, me and my husband would go in and pretend to be engaged just to see what these cakes taste like. You get 5-8 flavors for $30. That would be worth it!

7yyrt - at least part of our wedding will be cheesecake, and we are only having 50 guests. I think that is just a bit too much for me to handle. I've never made a cheesecake that turned out well!

cassandra - that would definantly be worth it! add a wine tasting, and it would be heaven.
