When I do the petit fours using the mini muffin pan as someone suggested on here, do I flip the muffins over and decorate the bottoms as the top, or keep them upright? Any suggestions are helpful as this is my first time doing them.

I've done it both ways. depends how much batter you use and how they turn out. I try to not fill more than 1/2 way, and usually use with top up. picture below has most w/ top up. I now make sure the papers are a little smaller--they look better that way.

good luck.

When I make them, the tops become the bottoms and the bottom the tops. I just make sure I don't put too much batter in because then you'll have a "lip" and you don't want that. Before coating them with candy melts/whipped cream, I fill each one with my buttercream frosting by using tip #5 on a bag of icing -- reminds me of a twinkie! Then I coat them with the covering. They are SOOOO good!
