Good Luck! All I can say is ICK why would anyone request that?? hahaha. I grew up in New Zealand where that is the traditional wedding cake, and I hated it-- Its a dense fruit cake covered with a layer of marzipan then Fondant... I hated it... and never wanted it for my Wedding... good thing I got married in the USA where they do normal cake haha..

Hi I am in UK

yes English wedding cake is a rich fruit base, covered in marzipan and then fondant or royal icing. I like it, but that's just me...

A lot of brides here now are choosing sponge cakes (or bottom tier fruit and top tiers sponge.) Actually fruit cake is much easier because you can make up to 6 months before - the alchohol in the cake preserves it - in fact it tastes better if has matured. Also you can get a much cleaner edge because the marzipan is put on in 2 pieces.

Look at my website, from memory, 'Holly' was a traditional fruit cake, as was 'Joanna'. and 'Louise' too.

pm me if you need a recipe

Here's a link to my recipe that I use for wedding cakes. It gives a beautiful moist fruitcake

Make well ahead and cover with marzipan and royal or fondant icing

darlene_000 I am from NZ and we think a fruit cake is normal here with almond icing then the fondant on the top and brides here hardly ever go for buttercream. The choice is from a light to a very dark fruit cake and most of the ones I make are light. With the fondant you can get smooth sharp lines.
I expect it is just where you come from what is the norm.
Good Luck PSLCakeLady. Briarview

Briar,

Maybe you misread my post.

I said I grew up in NZ and there fruit cake is the normal.... and I always hated it.

I said I got married in the USA where regular cake is the normal... and Im glad, cause I would have hated my wedding cake if I got married in NZ.
