Anyone Have A Great Gingerbread Cookie Recipe?

I'm planning on making gingerbread men this year and can't find one recipe on this site. I made some last year from one of my cookbooks and hated it.
My GB cookie cutter is 7" so they will be quite large. Looking for a recipe that's not too soft, but not hard or crispy either.
Any help out there? Thanks.

You can also read the reviews of the recipe there too. It calls for a small amount of black pepper which makes them nice and spicy.

Thank you for sharing this recipe. I just got a set of 101 cookie cutters from my DH and DS(3 of them). I have a new house cutter and gingerbread person cutter. I am gonna make some for a Festival we are having at our church this weekend.
I have a gingerbread recipe posted on here that is my all time favourite.. It is perfect for gingerbread houses..I also make gingerbears with it every Christmas as gifts.. they are really good keepers..

I personally like the Wilton gingerbread recipe - i find it exceptionally easy to make, its a dream to work with, and it does bake up very sturdy. Every year, we put on a Gingerbread House Decorating Party for our 2 boys & all their friends - and the Wilton recipe has seen us through 8 years of this.
