Whiter Buttercream?

I have switched to the Buttercream Dream Icing and love the flavor, texture, ease, etc. (although I only use 4 Tbls of milk). I just wish it were WHITE. Does anyone know how to make these high butter recipes white?

I'm new so I haven't tried this but I have read that if you add just a hint of lavender to these high butter recipes you will get white. icon_smile.gif

lavendar?? What an idea! I don't see lavendar and lt yellow making white, but what the heck, it is worth a shot. Thanks for responding!

wilton also sells a whitener. Its in a white bottle, larger than the gel colors.

I find the longer I beat my BC the whiter it becomes. I use equal amounts of butter/shortening and I beat my BC for about 10 mins on med speed on my KA. I don't know if it will work with the ratio of butter to shortening in the buttercream dream recipe, but it might help. I can get it pretty white once it is mixed for about 10 mins.

Yes, the lavender works!!! Just add a tiny bit. I use butter and crisco in my BC and add lavender a tiny bit with a toothpick when I first cream them together. It looks grey at first but whitens when you add the powdered sugar. Give it a try, you will be so pleased!

MissyTex, what a pretty cake! Now, next question, did you buy the lavendar as a color, or did you mix it?

leily, after reading about getting too much air in the icing, I was afraid to beat it too much. I LOVE to let that KA go, so I will try this! LOL!!

I like to make mine a day in advance if I can and then i just run a spatula through it after it sits and it gets a lot of the air out. Even if I use it right away I still run the spatual through it and kinda smooch the air bubbles out. This is how the purple tinkerbell cake was done and once I used the melvira method on it everyone at the party thought it was fondant, not buttercream.

My recipe also makes about 6 cups so it is just over the paddle of my kitchen aid, helps to keep the air bubbles down.

I use the following.

1c butter
1c shortening
2tsp vanilla
2lb powdered sugar
2-4T of water (depends on the humidity and shortening if I even need this or how much)

leily - What is your process. Do you first cream your butter and shortening, mix in your vanilla, then add your PS and add your liquid last, then beat for 10 minutes. I have heard some people add their liquid before their PS. Just wondered what you do. Your icing is very smooth! I use the exact recipe, but gave my recipe to my stepmom for her to make a cake....her icing came out lighter and fluffier. I am thinking she mixed hers longer than I do.

Yes Michaels sell a bottle of whitner (liquid) it looks like shoe polish but really works!!! Peeg

I use the Americolor Bright White and love it. I use the Buttercream Dream recipe and Love love love the Americolor white
