I have been asked numerous times for birthday cakes for diabetics. Does anyone know an icing recipe that I could use and decorate with that is also safe for diabetics?

The only ones that taste good (I am a diabetic) are something like whipped cream lightly sweetend with Splenda.

You can also check on the Splenda website, or the ADA website.

Yes, the CC diabetic recipe that uses heavy cream, sugarfree pudding and cream cheese tastes heavenly, pipes like buttercream, refrigerates well (if covered) love it, use it all the time

The recipe using hvy cream, sf pudding, cream cheese sounds worse for a diabetic than just using sugar. The cream and cream chees have so many carbs & fats that are major things you should avoid as a diabetic!

I am a Diabetic and I totally agree with pjrm. My dietician says it is better to take a smaller portion of the "real" thing than go with something sugar free and full of fat and carbs. Portion control is huge for diabetics.
