I am making a pirate ship cake for friday and I have finished baking the cakes to carve, have them frozen because I have heard that it is easier to carve somewhat fdrozen, but then realized...do I fill it while its still frozen? Do I not fill a sculpted cake? She only wants choc bc anyway so I know this acts as a glue...but when do I fill and when do I carve? Thanks!!!

Normally my cakes go right into the freezer after I make them, then I take them out put them on their board, fill them with buttercream and then carve away!

I've never frozen my cakes before carving. I'd like to try it sometime, because I've read it's easier, too, but I don't have the room in my freezer.

anyway, yes, I do fill my carved cakes. I don't slap on huge, thick layers of it, but I do use enough that you can tell it's there.

I carve frozen/chilled cakes then fill them after. It's less messy for me this way as I don't have to deal with the filling oozing out and icing dam breaking while carving.
