Help. I need a good sponge cake recipe. I have tried so many but they haven't worked. I guess it is because the flour in my country is heavy. Please can any one help out

Hmmm I dont really know what to tell you. I have no idea what kind of flour you have to use. Maybe there is someone on here that is familiar with your type of flour and can help you out.

here are two of my recipes.

# 6 eggs, separated
# 2 cups all-purpose flour
# 1-1/2 cups sugar
# 1 teaspoon salt
# 1/2 teaspoon baking soda
# 3/4 cup fresh orange juice
# 1/2 cup vegetable oil
# 2 tablespoons grated orange peel
# 1/2 teaspoon cream of tartar
# ORANGE GLAZE:
# 1/2 cup butter
# 2 cups confectioners' sugar
# 2 to 4 tablespoons fresh orange juice
# 1/2 teaspoon grated orange

DIRECTIONS
Let eggs stand at room temperature for 30 minutes. In a large mixing bowl, combine the flour, sugar, salt and baking soda. In a bowl, whisk the egg yolks, orange juice, oil and orange peel; add to dry ingredients. Beat until well blended.
In another large mixing bowl and with clean beaters, beat egg whites and cream of tartar on high speed until stiff peaks form. Fold into orange mixture
Gently spoon batter into an ungreased 10-in. tube pan. Cut through the batter with a knife to remove air pockets. Bake on the lowest rack at 350° for 45-50 minutes or until top springs back when lightly touched. Immediately invert pan; cool completely. Run a knife around sides and center tube of pan. Invert cake onto a serving plate.
For glaze, melt butter in a small saucepan; add remaining glaze ingredients. Stir until smooth. Pour over top of cake, allowing it to drizzle down sides. Yield: 16 servings.


# 6 egg whites
# 3 egg yolks
# 1-1/2 cups all-purpose flour
# 1-1/4 teaspoons baking powder
# 1/4 teaspoon salt
# 1 cup sugar, divided
# 2 teaspoons hot water
# 1/2 cup orange juice, warmed
# 1-1/4 teaspoons vanilla extract
# 3/4 teaspoon grated orange peel
# 1/4 teaspoon grated lemon peel

DIRECTIONS
In a large mixing bowl, beat egg yolks for 4-5 minutes or until thickened and light yellow. Gradually add sugar, beating for 1-2 minutes or until sugar is dissolved. Add orange juice beat for 2-3 minutes or until mixture slightly thickens. Combine flour and baking powder; gradually add to yolk mixture and mix well.
In a small mixing bowl, beat egg whites and cream of tartar until stiff peaks form. Fold into egg yolk mixture until well blended.
Pour into an ungreased 10-in. tube pan. Bake at 325° for 50-55 minutes or until cake springs back when lightly touched. Immediately invert pan to cool. icon_smile.gificon_smile.gificon_biggrin.gif

It makes a light fluffy cake.
Very easy and melts in your mouth.
