Idea On Icing For A Diabetic Cake

My dad is a diabetic and I am going to make him the Fast and Easy Low guilt Cake from the recipe column and the filling is going to be the Sugar Free Strawberry but i dont know what kind of icing would be good with it. does anyone have any ideas ? Thanks Michelle

There is a diabetic icing recipe in the recipe's forum. I just tried it and everybody really liked it!

Look in the recipe section here, there are aome diabetic icing recipes that are yummy!!! I made the one for decorating and it tastes really good.

Ummmm... let me get this straight... your dad is diabetic and you're making him a low fat, low calorie, high carb, high sugar cake (the low guilt cake).

If he's diabetic and his doctor isn't telling him to monitor his carbs (all carbs, not just sugar), he definitely needs to find a new doctor.

As far as a sugar free icing goes... cream cheese makes an okay textured icing. An icing that utilizes ingredients that provide the texture of sugar is a lot better, though. Does he do alright with sugar free candy? (russel stovers, sf hersheys, etc.) If he's okay with those, then he's okay with malitol. Powdered maltitol makes a flawless sugar free buttercream.

The icing recipe by marknrox is supposed to be very good.
