I just attempted to make chocolate clay. I melted 10 oz of Ghirardelli semi-sweet block chocolate (in pieces) over a water bath. I kept stirring it. I know they said not to let it get over 100 degrees so I took it off the water bath before it was done melting and set the pot on the granite countertop and kept stirring til it was all melted. I folded/mixed in 1/3 C lite corn syrup. Directions say it will come together in a ball. It did not. It formed a very thick, grainy, greasy looking thick mixture. When I stirred it to the side it spread very slowly but it was definitey not a ball. It is not smooth looking. I spread it out on a silpat mat to cool. Did I ruin it?
I did add less than 1 TBS of Ghirardelli semi-sweet chips because I was just shy of the 10 oz....
I hope I don't have to throw it out!  |

Don't throw it out! This is normal looking at this stage. Wrap it in saran wrap and let it sit for several hours, or even over night. Then soften it a bit (in the microwave) and start kneeding it, and it will be ready to use. It looks like a mess right now, but what you have is just right, and it will come together! |

Yup, this is normal. I thought I screwed it up the first time I made choc clay too, LOL. What worked for me was to put my bowl inside another bowl that had ice water in it. Once the mixture started to cool down it all came together.

Oh thank you so much! I actually read through a great section on chocolate on and they said to squeeze the oil out of sections of the "clay" before you start working with it.. Anyone done that? It did harden up over night. Left it spread on Silpat and covered with saran.... |

I like to squeeze mine out. It seems smoother and the clay dries firmer too once you are finished with what ever you are modeling. I LOVE cany clay! I think you will fall in love too. It is so much fun to work with and much more forgiving than fondant. |

I love it too! I like how it's firmer than fondant....easier for modeling. I might have to try squeezing out the liquid next time. I'm wondering how well it's going to hold up in the summer heat.

I love it too! I like how it's firmer than fondant....easier for modeling. I might have to try squeezing out the liquid next time. I'm wondering how well it's going to hold up in the summer heat.

It definately takes a bit more patience and some trips to the fridge, but it will still work. Squeezing helps with the summer heat factor too. |
