Did I calculate this wrong??? My customer wanted a full sheet cake (18x24) but since the pan doesn't fit in a regular over, I made 2 half sheet (12x1 cakes and made it as a double layer cake. The servings were supposed to be 1x2" for 100ish people.
I told my customer that is what I would be doing but after she received the cake, she said everything was perfect but the cake was a half sheet instead of a full sheet.
I haven't spoken to her yet but that's what I heard from an individual at the party.
Any comments?
She was probably looking for the cake to be side by side. The amount of cake would be the same as a one layer sheet would probably be cut 2x2 in.
I think the cake is very cute.
If you explained it to the customer before hand, and they knew how to cut the pieces accordingly then you are 100% in the clear here. What business is it of a guest what size cake was ordered? Unless it was talked about by the hostess.... all in all you gave them the same volume of cake as a full sheet and they got what they paid for. The only thing I can think of as being a problem is that a full sheet LOOKS bigger than a double half and so someone could have been disappointed in the "wow" effect... but again, if you already cleared it with the customer, then no harm no foul.
FWIW, what I do for full sheet cake orders is bake the same way you did, but then set the half sheets side by side so that the fully iced cake is a full sheet.
According to Wilton, a double layer 12x18x2 yields 72 parts size (1 1/2x2x4") servings.
A double layer 14x22x2 yields 98 party size servings.
