I am trying to find a very rich, chocolate icing for my mom to make (Read: must be an easy recipe!) Any easy and delicious recipes?

Also can you bake chocolate chunks into cake batter?

THANKS!

I love the chocolate fudge buttercream here in the recipe section...I usually add cocoa along with it though because my family are dark chocolate junkies.

You can add chunks to the batter, but if they are big, they will go mostly to the bottom, therefore being on top of the layer when you turn it out. If they are a little smaller- like chips or mini chips, they will go throughout the batter, especially if you shake them in just a little flour before adding them.

Try chocolate blender ganache. It only has three ingredients. It is super easy, and it is not too sweet and super chocoaltely.

Frosting
6   ounces unsweetened chocolate
1 cup evaporated milk
1 1/3 cup sugar

melt chocolate over hot water. cool slightly. Blend sugar and evaporated milk in blender for 10 sec. Add melted chocoalte. Turn blender on high for 2-3 minutes until frosting thickens. You will hear the change in the sound of your blender motor. Pour into bowl and rest for 30 minutes as frosting thickens. If you don't use all of the frosting, do not refrigerate. Store in a covered bowl at room temperature for up to 3 days.

Chocolate Syrup Frosting in the recipe section is a great one too. I usually add a bit of melted chocolate to it as well. YUM!
