Making Cookies Without Cookie Cutters..

Quite a few of you are shocked when you private message me to ask where I get my cookie cutters from and I tell you I only one one cookie cutter. And no, it's not the rosebud that you all ask me about.
Here's how I made the rosebuds and all my other cookies other than the sunflower cookies (I have a cookie cutter for those)
First I will either print or draw the outline of the shape I want to use. Then I cut the shape out. I cut slightly more than the outline of the image. In other words I do not cut right on top of the outline.

Once my outline is cut out I remove my dough (already rolled out to the correct thickness) from the freezer and I place the outline on top of my dough. Using an exacto knife or a paring knife I carefully cut around the outline. And I remove the excess dough.

To insert my cookie stick I place one hand on top of my dough that has been cut out. With the other hand, I insert the stick from the base of the cookie. Placing my hand on top of the dough helps to keep the dough from bunching up and I can feel how far into the dough the stick has been inserted.

I then flip my dough with the stick over to check to see if the stick has penetrated or split the back of my cookie dough. If it has, then I take a piece of excess dough and simply patch it up and it's good as new (Pic 4).
Pic 5:
Then I flip it back over and place it on a parchment lined cookie sheet. I chill my dough again before placing it in the oven. This keeps spreading to a minimum.
Tip within a Tip:
The outlines I really like I tend to laminate so that I can clean them with hot soapy water and a little bleach and reuse them.

No, I will not be submitting this to articles. I made it because I usually get quite a few private messages about cookie thickness and other questions regarding my cookies. Problem is some times I am at work and i can't answer right away. This way it's here if anyone wants to know how I do it.

Yes I do but the last few months have been so hectic for me baking has been taking a back seat. With things winding down I will be back to posting more stuff more often.
This is a great site to learn loads of stuff and people are very helpful so if you have questions feel free to ask.

Bumping up for dolcesunshine. C_P (may I call you C_P, it's easier ), this little tutorial is great! Very creative of you to make your own. Time consuming maybe but I bet you never have to "worry" about making what you want. Kudos, Cookie Queen!

I just want to let you know that I;m new to this and I was just surfing to see if I could figure out how t make cookies on a stick. You have really blessed me with this and I hope it really works for me as well as it did for you. Your instructions were very informative and straight to the point. I think I'm gonna try to make some of these for my children's teacher's for the end of the school year.

Thank you to whomever put this up again. I was just asking about it on another thread. I am new to this and cannot afford to put a lot of money into cookie cutters right now. I like the idea of being able to do them with a template. The possibilities are endless once I learn to do this. You all are great. I learn more from looking around on this site than I do from looking through the books that I keep checking out.I just posted my first set for this month and am planning out the next set that I will try to do by this weekend.
I did the dumbest thing Cake-Princess. I dont know if anyone else does this. So maybe i can save them. I tryed your cut out method they looked great. Untill I tryed to pry them off of the counter. I was looking at silpat mats to save me from the sticking problem( i didnt want to use too much flour and make them tough.) Then it dawned on me you proboly roll them out on wax paper. Works great. I almost had to join the cookie strick with Zamode. I hate it when my brain goes out to lunch and forgets to invite me.

LOL. Yes I did roll them out between two sheets of wax paper.
There is another mini-how-to that's kind of a part 1 to this. It's the one where I showed how to roll out cookie dough to a uniform thickness. It also shows me using wax paper to roll the dough out.

Zamode gets on her knees for no one but the Lord. He is well aware of the Cookie Strike.....each time before I begin decorating, I say, "Please Lord, may they finally come out *this* time...." I think He is trying to send me a message!

I just made my own patterns over the weekend, and used acetate for the pattern material. (My husband bought lots of package booze sets over Christmas, and kept the clear front panels.) These clean up great...but I hate that they are clear! I kept losing my pattern! Does anyone know of a good place to go to have someone custom make cutters at reasonable prices? These would be fairly small cutters, and I know I wouldn't be able to make them myself.
this is exactly how i make my cookies, only i cut out my picture then laminate it. they're easy to wipe off when i'm done with them.
geminirj, them my picture is laminated for decorating too.
Thanks for the post Cake_Princess! I think this will work better then when I tried using wood cutouts to make cookie shapes.
When you do your cookies, do you use the NFSC recipe? I've tried it a couple of times and wasn't happy with the results.

I Know this question gets asked all the time so I am bumping this thread up for those of you that want to know how cookies pop sticks are inserted.
