Looking For Vanilla (Yellow) Cake Recipe

I searched through the recipe tab and found a few but was wondering if anyone has a moist vanilla cake recipe. I'd rather go by recommendation icon_biggrin.gif My aunt wants a vanilla cake with vanilla mousse and whipped cream topping for my cousin's birthday. Really boring in my opinion but I guess it is what he likes. I am having a lot of trouble finding a good vanilla cake recipe. It doesn't even have to be from scratch. Thanks so much!

I like to take a DH white cake mix, use whole eggs rather than just the whites, add an extra egg and a package of French Vanilla pudding. It makes a lovely golden cake with a wonderful vanilla flavor. I used this for my son's wedding cake and it was delicious!

Haven't tried it, but I would suggest the Vanilla Cognac cake -it's posted in this forum by txkat...just the name of the cake alone has me drooling -now if there were only an emoticon to match icon_biggrin.gif

I just posted the Busy Day cake recipe. It is a humble cake - nothing fancy about it. But it has a strong vanilla flavor and it is a yellow cake. If you use vanilla paste, people will notice the little dark specks- vanilla seeds- and be convinced it is definitely up-scale. Call the recipe Vanilla Bean cake or something like that. You would have to double the recipe to get a layer cake.

How do you use vanilla paste? Do you use the same ratio? Can you get it at a grocery store? I've never heard of this before. icon_redface.gif

Vanilla Paste is new to me also. I discovered it a couple of months ago. The link above is where I ordered mine. Because of the price, I only use it when vanilla is the major flavor, and I want that flavor to be note worthy. You use the same amount of paste as you would extract. It is the consistency of warm corn syrup; you can see the vanilla seeds in the paste. I seriously doubt that it is available in grocery stores. This stuff is for serious vanilla lovers.

I really like Sylvia Weinstock's recipe. Instead of separating the eggs I add them whole, though. Too much trouble to separate them. I also add the seeds of a vanilla bean to the creamed sugar. I call it "Vanilla Bean" cake. It's very moist and tastes great.

Butter Cake

Based on Sylvia Weinstocks recipe
Fills (1) 12x3 pan or (2) 8x3 pans

2 ¼ C sifted cake flour
2 t baking powder
½ t salt
½ lb/ 8 0z (2 sticks) unsalted butter, room temp.
2 C sugar
4 large eggs
2 t vanilla
1 C sour cream

1.Preheat oven to 350F.

2. Sift flour, baking powder, and salt

3. Cream butter in large bowl till fluffy and light in color, about 2 min. on Med. Speed.
Add sugar and cont to beat till light and fluffy.

4. Add eggs, one at a time; Add vanilla or vanilla beans.

5. Reduce speed to Low and add dry ingredients alternately with sour cream; beginning and ending w/ flour. Scrape sides of bowl and beat for 1 minute.

6. Bake till done: top should be nicely browned. Test for doneness with a toothpick- it should come out clean.
