Here is our family favorite! Play close attention to the directions because it is the dry ingredients that go in the mixer first! These are sooo yummy, that we even eat them without icing on them! Enjoy!
One Egg Cupcakes
2 c. All Purpose flour
1-1/4 c Sugar
2-1/2 ts. Baking Powder
1 ts. Salt
1/3 c. Crisco, shortening
1 ts. Vanilla, PURE
1 c. Milk
1 large egg
Directions:
1. Preheat top oven to 400*. Line cupcake pans with paper 24 baking cups.
2. In your mixer, combine flour, sugar, baking powder and salt. Add Crisco and 2/3 c. of the milk. Scrape sides of bowl well.
3. Beat for 2 minutes. Add remainder of the milk, add the vanilla and the egg. Beat 2 additional minutes. Scrape sides of bowl well.
4. Bake cupcakes for 15-18 minutes.
I made the cupcakes today and my family loves them . I love the soft texture too, its not too grainy . It will be my go back to recipe for cupcakes.Thanks for sharing the recipe.

LOL...wow, sounds like they REALLY liked them! Either that or you have a really big family!! Did you put icing on them or no? Sometimes, I sprinkle them with powdered suger for a change!
I made a chocolate frosting from scratch with bakers unsweetened chocolate and piped it on with a star tip. I do have 2 brothers and 2 nephews with huge appetites they gobbled them right up . Of course my dad and mom and other family members joined in to try them .They made several comments on how good they were . I gave you all the credit for the recipe . I know I will be making cupcakes all the time now when I make something they really like they always ask for more I dont mind though its that love of family thing.
This seems like a great recipe! Is there a way I can replace the Crisco for something else, since that isn't that easy to come by where I live (the Netherlands)?
I tried this recipe this morning and I used cooking margarine because I can't get crisco here. I must say these are the lightest, fluffiest cupcakes I've ever made.

Now all I have to find is something I can replace for crisco in MMF, I think that might be harder.

..there is no crisco in MMF...jut water, marshmallows and powdered sugar. Crisco is just used to keep it from sticking to surfaces and hands...you could certainly sub margarine there too!
Is this a yellow cake or white-ish? Could you make it chocolate and keep the consistancy?
I also tried this recipe and it was very good. It was nice and fluffy and light and more white than yellow.

this is an old post LOL but I just made these today, but I dont have much experience making cupcakes... How much are you supposed to put in the cup? i had to fight to get 24
