hello everyone

I'm new here, but I thought I'd try my hand at the Crusting Butter Cream

There is one problem, however. I live in Sweden and I can't recall ever seeing "Crisco" in a store. Do you know what it could be replaced with? It's some kind of fat, right? I just checked Wikipedia, but I can't really understand what is so special with this fat

thanks in advance!

Welcome to CC!

Try looking for a high-ratio shortening. I use a product called Alpine, I think there is another brand called Sweetex (not sure of the spelling) I get mine from a local supplier, but you should be able to find one of the alternative products from a local source. Good luck.

I will look for those brands, but in case I can not find them, could anyone explain what "high-ratio shortening" is? Or give me a link or something

Wikipedia talks about pure plant fats with a high smoking point - would coconut fat or something like that work, you think?

If I can't find anything suitable at all, maybe I'll try to order somehing online

DancingMoon, I found this explaination on www.baking911.com:

"EMULSIFIED/HIGH RATIO SHORTENING: also known as cake, icing or high ratio shortening, can absorb more sugar and liquid than regular shortening. It gives a finer and smoother texture to cakes and help keep them moist, as well as keeps icings more stable. However, it should be used in icings and cakes where the recipe contains a large percentage of sugar. For home use, it can be found under the brand names Alpine Hi-Ratio Shortening or Sweetex. Find it at http://maidofscandinavia.com/ Click ingredients and then click "s" to find it. Or, go to http://www.cookscakeandcandy.com and click on online shopping, enter store and search on sweetex. It's Product ID: FP027/3"

Hope this helps.

Crisco is solid (at room temperature) white vegetable fat. It's sold in tubs in the US.

Alpine and Sweetex are baking specialty items not usually sold in supermakets in the US. I'd guess that they wouldn't be any more available anywhere else.

Thanks for the tips!

I actually did find a cake specialy shop near here. They don't carry Crisco on the homepage, but I'll note down what it is and ask them for advice.

They also carry fondant, so maybe I'll just buy a tub and use that if nothing else works icon_rolleyes.gif
