Yes it does and it is really good! I've made it with and without the cream cheese. Here's a link to the recipe if anyone else is interested.

Thanks Lisa, so if you don't want the cream cheese just leave it out and mix the rest of the ingredients
Wonder how long you would have to keep in the fridge. in order for it to stay out for about 4-5 hours room temp??
the cake looks delicious mamafrogcakes!
Hmm, what kind of cake was underneath this icing? A friend would like a German Chocolate cake with the icing that goes along with, why wouldn't this icing work with the sugar free coconut pudding....and of course finding a sugar free GC cake mix...ha!
Thanks Lisa, so if you don't want the cream cheese just leave it out and mix the rest of the ingredients
Yes. It'll be a little looser but you could probably still do borders with it. I was just using it as a topping on sugar-free jello
My cake was a regular white cake with a diabetic pineapple filling (I got off the boards as well). You could use any flavor of sf pudding! It was really good! I was totally surprised!! So was the person who I gave this cake to!!
Oh, how cool! I didnt know you could leave out the cream cheese! Thanks for the tip Lisa.
Mmmmm...next on the list, sugar free white chocolate pudding mix.
I do have a question for you mamafrogcakes-is there a decent recipe for a sugar free cake? Or as close to one as a person can get?
The cake that I made was a box. The person that I made the cake for that he could have the cake part it was the icing that was the problem. Maybe you can check, I really didn't know that much about diabetics!
Thank you, I've talked with him earlier in the year concerning this problem. His only wish is to have this German Chocolate cake with the coconut/pecan icing on it, only for a diabetic. So, guess I get to experiment some!
Thanks again.
